Cheesy Rice Dressing

I got this recipe from my aunt Pat over 20 years ago and it is one of those soul satisfying kinda dishes. Right up there with homemade mac/cheese or chocolate chip pancakes. Comfort food, ya know?

Start melting about a half cup of butter into a medium to large skillet. Then, chop one small onion and start sautéing them. Next, add pink salt, fresh ground black pepper and parsley. Heavy on the parsley. 


Let the onions cook down until almost clear and then add about 2 cups of spring water and bring to a boil. Add about half the box of Minute Rice and simmer until tender. 


Now you can start folding into the skillet about a cup of sour cream, blending well and then the cheese. I used Colby and Jack mix but you can use whatever cheese you like and however much you like in order to attain desired cheesiness. 



Melt and mix until thoroughly mixed and then serve. This is slightly different from my aunt’s recipe but I like it this way better. You can use this as a side dish or make it your meal. Delicious!!
