Lazy Girl Meatball Ideas

Sometimes I don't feel like slicing, dicing, chopping and mixing. Sometimes I just want to heat something up and have a meal, ya know? Well, now that I am eating more fresh vegetables and fish, those days of being lazy are few and far between because everything has to be prepared.

Taking a trip down memory lane for a moment, back when I used to eat more meat, there was something that was super quick, extremely versatile and quite tasty. It was those meatballs in the freezer section of the grocery store. Who knows what all is used in making those. If I really like something, I don't want to know what's in it.

And I hate to admit it, but I like those meatballs. Great Value is the brand I've used. I am successfully staying away from most meat these days but I remember a few dishes that I would make with those meatballs and I will share those now. Of course, I have to start with good ole spaghetti and meatballs.

I usually prefer angel hair pasta, but for this previous meal that I photographed, I only had regular spaghetti. I simply would thaw and heat up the meatballs in a skillet. Cook the spaghetti and set aside for a moment. I would then smother the meatballs with a jar of Bertolli's Vodka Sauce. Voila!

Another meal I would make with these meatballs is sort of a stroganoff but not exactly. Again I would heat up the meatballs and then smother them with a can of cream of mushroom soup and some sour cream. I might sprinkle some dried chopped onions while the meat is heating up.

You can serve these little balls with egg noodles for a stroganoff meal or toss in some green beans and a side of instant mashed potatoes. Idahoan makes a pretty tasty variety. I like lots of butter flowing down my mashed potatoes. And of course, I have to black pepper everything. Very yummy but no work whatsoever!

Another meatball idea uses barbecue sauce. Simply heat the balls and then smother them in your favorite barbecue sauce. Serve with a side of mashed potatoes and your favorite veggie. For this picture, I used green beans. Again, no work for this lazy girl, but tasty fixings.

I'm pretty sure there are lots of other ideas for these meatballs, but these are a few of my favorites. I am still going to try to avoid most meats but if I waver in my determination, I know what section of the grocery store I can head to if I'm feeling especially lazy.
