There are those in the natural health world that say not to eat lentils because they contain lectins that are harmful to the body. But research has shown that cooking them thoroughly removes most of the lectins originally present. And with this recipe, we are cooking them again.
So there you have it. Today I’m going to share my refried lentils “bean” dip with you. I start by pouring about a quarter cup of EVOO (extra virgin olive oil) into a small skillet. I add about a teaspoon of garlic powder and about the same of fresh ground pink salt.
And you know that I’m going to finely chop onions and red sweet bell peppers and let those simmer a bit. Next I add about a half a can of lentils after draining the liquid. I mix that very well while mashing the lentils.
I cook that mixture, stirring and mashing continuously until I have a consistency that looks like bean dip. I have already tasted this even before I finished cooking it and I was impressed by how good it is.
Of course you can use this as a side dish but I dipped my Tostitos Rounds in it or you could dip big radish slices into it too in order to avoid additional carbs. Either way, this is yummy!
