Perfect Pumpkin Seed Shell Solution

So recently I tripped over a forklift at work and broke two bones in my right foot. The doctor ordered me to stay completely off my foot for 6-8 weeks. That’s hard. 

You guessed it, I’ve been spending a lot of time on my phone with social media and googling every single question that pops into my head. 

One of those questions was: How can I help my broken bones to heal faster? My research discovered some interesting things. Vitamin C was mentioned as well as Vitamin D, calcium and magnesium. 

So I ordered a few things from Walmart and Amazon and started an even more healthy diet routine than I had been doing previously. For the magnesium requirement, I chose to try something new. 

You guessed it again. Pumpkin seeds. In a quarter cup of pumpkin seeds, there is 185 mg of magnesium. More than any other food. But there’s a problem. 

I had never eaten pumpkin seeds before in my life. I didn’t know that you can order them shelled or shell on. I didn’t know that eating them with the shell on is okay and richer in fiber but somewhat hard to chew and swallow.

After a few handfuls, I’m thinking: what the heck? And I thought maybe I was supposed to shell them and started spitting the shells. So back to Google to find out what I was doing wrong and whether or not I was going to die from this. 

Thankfully no, I wasn’t going to die. But I had bought these in bulk and didn’t know what to do now. But you know me with my experimental imagination, I needed to come up with something that would make eating all these shells a little easier. 

So here’s what I came up with. It’s not actually perfect but I think it’s doable. I dumped the seeds into a blender with some water, almond milk, salt, pepper, sage, cubed sweet potatoes, beet/carrot juice and five spinach leaves. Yes, sweet potato soup. 

I simmered this smooth creamy mixture on medium heat for about 15-20 minutes while melting a scoop of butter within it and tried to eat them again. The taste was amazing! However, the seed shells are still there somewhat…but less noticeable and they swallow right down with the soup. 

Am I a genius or what? Yeah, I didn’t think so. 🤣
