Super Healthy Chili

Lately, I’ve been trying to reduce or eliminate beef from my diet because it seems to tear up my digestive system. But I LOVE a good cheeseburger, homemade chili, spaghetti and meatballs and the list of scrumptious beef meals goes on and on. 

So, I decided to try to make homemade chili with ground turkey instead. I was very apprehensive because I just didn’t think it would be as good. However, this recipe turned out great!

To start, I poured a little olive oil into a skillet turned on to medium heat and then crumbled about a pound of ground turkey. And if you’ve ever read any of my other pages, you know that I’m going to chop some white onion and sweet red bell pepper. 




Seasoning included pink salt, fresh ground black pepper, parsley, garlic powder and chili powder. I let that simmer for awhile, stirring and smashing the meat until it was fully browned. 

Next, I added about a half can of mild Rotel, but you can choose your own level of spicy here. I’m a wimp when it comes to spicy so I chose mild. Instead of chili beans, I used about a half can of lentils because I’m trying to think about healthier dishes. 




I let this continue to simmer for about another fifteen or twenty minutes to make sure that the flavors mix well. At this point, I’m thinking that this looks and smells a lot like the real thing. I like to top chili with a dollop of sour cream. 




Wow! I was surprised how good this healthy bowl of protein, vitamins and nutrients was! The only thing that I might should have added was a little bit of tomato paste to make it more tomato-ey.
