Scramble the eggs with a fork to achieve small pieces of egg. Add the following spices to taste: chopped onions, garlic powder, parsley, turmeric, chili powder, pink salt, fresh ground black pepper and sage.
When the egg is mostly scrambled, add one package of frozen cauliflower rice that had been thawed. Begin stirring and cooking the “rice”. Add the carrots and sweet peas and continue stirring.
As this mixture dries out a little, add a little more olive oil, salt and pepper and cook for about 15 minutes or until the cauliflower is very tender.
At this point, you could add some soy sauce but personally I’d rather not. I like it just the way it is. Enjoy!!
Side dish or main event, either way, it’s very healthy and to add some cheesy texture and flavor, stir in two tablespoons of nutritional yeast. Yay!
