Radish Chips

So this is another post where I won't be cooking anything. I just wanted to share what I think is a great idea. There have been so many times that I wish I had a substitute for either a tortilla chip or a potato chip due to the carb content because I really love certain dips but don't wish to add to the carb content of my snack.

A few of my favorites are guacamole dip, cheese dip, bean dip and sour cream and onion dip. I have made homemade sour cream and onion dip before simply by sautéing finely chopped onions in butter and then adding some sour cream and parsley to it. Also, I make homemade guacamole dip with chopped tomatoes, onions, sweet bell peppers, an avocado, salt/pepper, sour cream and lime juice.

But I have searched for a substitute chip and haven't found anything as satisfying as a good crunchy tortilla or potato chip....until recently. I read online where some have suggested using cucumber slices or store bought kale, sweet potato or zucchini chips. But to me those add their own flavor so strong that it detracts from the dip. And I don't like the seeds that cucumber slices add to the texture of each bite.

So recently, completely by accident, I discovered a chip that I love with dips. I'm sure by now that you have deduced that I mean radish slices. Yes, that's it. Radishes, to me do not have much flavor. But they do however, add a little heat and a lot of crunch to the bite. The other day, I was making a little egg salad for lunch and I didn't want to use any bread. 

Leaning into the fridge to find something else to eat my egg salad with, I saw a half eaten bag of radishes that I normally only use for salads. I like to experiment with food, so I sliced up three medium to large radishes. My egg salad consisted of two hard boiled eggs, salt/pepper and mayonnaise. Sometimes I use a little chopped onion and pickles too, but not today.

The radish slices were just perfect! They were just like a round tortilla chip for scooping up the egg salad and they had an amazing crunch. And the most important part of this scenario is that my bite mostly tasted like egg salad with a little zing. I am pretty excited about this discovery. Maybe it's been around awhile for you, but to me it was new.
