Chocolate Chip Cookie Day

You noticed that I used the word cookie in the singular, didn't you? But who makes just one cookie, you may wonder. Well, I do and for good reason. If I made a whole batch of these, I would eat them all. It doesn't matter that they are sugar-free, gluten free and whatever else free, it is just not a good idea to eat a whole batch of anything.

So I make one large cookie when I'm craving something sweet and chocolatey. That way, I can eat the one cookie and be done with it. My craving is gone and I have not overindulged or overdone anything. So this recipe starts with a little bit of coconut flour, maybe 2-3 tablespoons. 

You can also use almond flour, which would probably be better but I only had coconut flour today. You can also substitute one of those tablespoons with tapioca flour to make the cookie stick together better, but I forgot to do that today. So I am using just my coconut flour this time.

Add about a half teaspoon of salt. I like to use pink Himalayan but use your preference. Then, I added about 2-3 tablespoons of monkfruit sweetener or you can use your preference of sweetener.  Then crack open one pasture raised, organic egg and mix these ingredients thoroughly. Fold in about a quarter cup of Lily's sugar free chocolate morsels and a few crushed pecans or walnuts if you like nuts. Your mixing bowl should look like this...


After mixing well, I like to use hand gloves and I form the mixture into a ball, then I melt a little butter in a skillet and press down the ball into a flat cookie shape and place into the skillet. Keep in mind that the mixture will not hold together quite as well as when you use regular wheat flour but eating with gluten free flours has been a good thing for me.




Let the cookie simmer for a few minutes on medium heat and flip to cook both sides. The cookie is done when both sides are lightly golden brown. Move to a plate and enjoy with a glass of cold almond milk. Very good cookie! And no guilt. :)
