Italian Steak and Red Lentil Pasta

I wasn't  sure what to call this dish. It has strips of beef steak, onions and bell peppers which kind of makes me think of Japanese food. 

Or if you could easily say that it is like Mexican fajitas.  But the red lentil pasta and spaghetti sauce feels very Italian.  And with basil and garlic for spice? I'm going with Italian. 

So let's start with a large skillet and dump the beef strips in with an asada marinade. I use Just Meats brand because the meat is ready to go, pre-cooked about a pound.


You can see here that I added about a cup of chopped onions and bell peppers and about a half cup of water. I let this simmer for a bit, adding garlic, sage, black pepper and basil.


While this is simmering,  I put a little water in my cup of chopped broccoli and cauliflower and microwave those for about 3 minutes. I will cook them more later, but that's to get a headstart.


Now you see I've added my red lentil pasta and gently stirred in, making sure that they all get cooked to a tender bite. At this point, I go ahead and add my broccoli and cauliflower,  letting all this simmer for 10-15 minutes. 



I'm ready to add the spaghetti sauce,  mixing well. Most of the water that was previously added should have cooked out by now. I like to top this off with shredded cheese, a Monterey and Colby mix. Uh oh, does this dish feel Mexican again? 


Not sure what ethnicity this dish is but it sure is GOOD!
