Simple Protein + Plant Meal

Sometimes we need meat. Personally, I love bacon and chicken and some fish. I eat a lot of eggs. I pretty much avoid beef. But that’s just me. 

But sometimes I just really enjoy a plant based meal. And I really like keeping meals simple. So today, I have a recipe for you that’s so good!

The protein is derived from pinto beans and the veggie is one of my favorites…brussel sprouts. I started with a medium heated skillet and a generous amount of ghee. (I guess that’s not plant based)

I sliced in half about half a package of frozen brussel sprouts and placed then core side down into the butter. Seasoning involved salt, pepper, onion, garlic, chili powder, sage, parsley, turmeric, and ginger. 

I let those sizzle about 10-15 minutes and then I turned each sprout over to sizzle on the leaf side. Next, I added half a can of pinto beans around the brussel sprouts and continued cooking. 


After a few minutes, I stirred this mixture up and then covered the skillet, allowing it to simmer another 10 minutes. After everything was tender, I poured the contents into a serving bowl. 


Now my simple protein and vegetable meal was ready to eat. Incredible taste! And pretty darn healthy too.
