Texican Shepherd’s Pie

Here’s a slightly Texican twist on my mother’s Shepherd’s Pie recipe. I brought this meal recently to a loved one who was grieving the loss of her husband and she loved it so much, she had thirds! 

So, start with about a half pound of ground turkey meat, simmered with chopped onions, tomatoes, black beans, and chili spices until cooked throughly. 

Drain this mixture slightly and add to a round glass baking dish as the first layer. Next, simmer a can of whole kernel corn with some chopped tomatoes, spices and melted cheese. I used provolone and Swiss but Monterey Jack would be good too. 



The top layer for this dish is simply a prepared package of loaded instant mashed potatoes. After preparing, I added the top layer and garnished with chives and parsley. 


Here’s a couple of views of the finished product after it was baked in a 350 degrees oven for 30 minutes or until thoroughly heated. 




It was SO good!!
