So, this morning I was feeling fully recovered from an intestinal illness that I have been suffering from for the past week. Especially hungry, I stood in front of my refrigerator and then my cabinets looking for something that would be satisfying yet healthy.
I saw on the counter a few bananas that were beginning to turn speckled brown and decided to make some healthy pancakes. I peeled a banana and mashed it with a fork into a wide shallow bowl. Then I added a couple of heaping spoons of almond flour and a large spoon of tapioca flour.
I blended that and then added an organic free range egg. Next I poured a little almond milk just to give the mixture a batter like appearance. I wished I had thought to sprinkle a little cinnamon but I forgot to do that. That would have made my pancakes even better.
After mixing these ingredients well, I used a measuring cup to scoop up some batter into a medium heated and generously buttered skillet. Waiting until bubbles form in the pancake, I then turned the pancake over to finish cooking on the other side. I was just thinking also here that crushed walnuts could have been added to the batter as well. Not too many though.
These turned out pretty good. Not as fluffy as some other flours might achieve, but certainly eatable and enjoyable. I really need to make some sour cream banana bread with the rest of the "turning" bananas. Maybe that will be my next post. But for now, I need to eat these pancakes. And of course, I will not be using anything but pure organic maple syrup.
