Garlic Chicken with Cauliflower Rice

It’s always a challenge to come up with new chicken meals. But this one came out really great. And I was excited to try cauliflower rice because I never had before. 

So I started with a medium sized skillet, on medium heat, adding a pretty good squirt of olive oil, pink salt, fresh ground black pepper, sage and garlic powder. 

First, I sliced and chopped some white onion and red bell pepper and added them to the oil. I washed three chicken tenderloins and flayed them with a fork, putting them into the skillet. 

I guess there’s a lot of adding here, but next I added the broccoli florets and riced cauliflower, just enough to make it look like a meal. Then I added some more salt and put a lid on it, occasionally stirred it and let this simmer for about twenty minutes or so. 

Amazing how quick this delicious dish is…was 😜
